PRODUCTS
All
of our products are exceptionally fresh, and completely
natural. We make all of our products from the milk
of our own small herd of Jersey cows. Our milk is
moved less than 200 feet from the barn to the creamery,
where it is pasteurized and transformed into delicious
yogurt, cheese, or simply bottled.
During
the summer months, our cows graze on our 20 acres
of our fertile pasture. In the winter they are fed
hay and organic grain. Most of our hay is grown on
our farm during the summer. We do not use hormones,
antibiotics, or synthetic inputs anywhere on our farm.
All
of our products are made from whole milk. The nutrients
in milk are fat soluble, which means that our bodies
need the naturally occurring fat to absorb the nutrients.
Fresh, natural, grass-fed whole milk provides nutritional
and environmental benefits that separated, recombined

Milk
Our
whole milk is pasteurized, but not homogenized.
Non homogenized milk is rich and creamy, and
forms a healthy layer of cream on top. Our Jersey
cows produce milk with higher butterfat content
than other dairy breeds, and because much of
the flavor in milk is in the cream, our milk
is full of flavor!
You'll
notice that Wake Robin milk has a distinctive
golden hue, which is a reflection of the high
vitamin content in our milk. During the summer
months, our cows graze on fresh grass and clover
in our pastures, and the vitamins from the fresh
vegetation go directly to the cow's milk. Our
golden-yellow milk is creamy, delicious, and
wholesome, and we're proud to share it in its
natural state with you and your family.

Yogurt
Our
yogurt is mild, creamy, and fresh. It is made in small
batches from the whole milk produced by our own small
herd of Jersey cows. We deliver it directly to local
stores where it is sold, so it comes to you at its peak
freshness.
Our
yogurt is all natural, and free of stabilizers, thickeners,
or other unnatural products. Wake Robin Plain Yogurt
contains only two ingredients: milk, and probiotic cultures.
We add vanilla extract and pure maple syrup to our Vanilla
and Maple flavored yogurts.

Nutritional
Information
Due
to the small size of our dairy operation, we are exempt
by the FDA from presenting nutritional information on
our yogurt containers. We know this information is important
to many people, so we have posted it below. Please know,
however, that because our cows are grass-fed during
the growing season, the fat and protein content in their
milk varies throughout the year. These variations cause
the nutritional values to fluctuate as well. For this
reason, we list the nutritional information as a range
for each component:

| Cheese
We
currently offer three unique artisan table cheeses,
as well as fresh cheese curds during the summer. Like
all of the products we offer, our cheese is all natural,
and made by hand in small batches right on our farm
with our own fresh milk. Bruce & Meg Schader are

Bailiwick
Cheddar
Our
Bailiwick Cheddar is a distinguished twist on a traditional
cheddar cheese. The creamy flavor of our Jersey cow
milk is pleasantly balanced with a subtle cheddar finish.
The word 'Bailiwick' was originally used as a term for
land or territory but can also be used to indicate an
area of expertise. It is still commonly used in the
Isle of Jersey, where our Jersey cows originate! The
name is homage to our farm; the locale, the land, the
Jersey cows, and the experience of farming.
Mona
Lisa
Mona
Lisa is a famous 16th century Italian painting. No one
can decide what exactly makes the Mona Lisa such an
appealing piece of art. The same is true for our Mona
Lisa cheese. Everyone loves it, but no one can say exactly
why. One customer described it as having a "smooth,
mellow flavor with wonderful after tones", and
we'll stick with that description of our Italian style
cheese.
Caerffili
Caerffili
is salty, tangy, semi-soft cheese that originated in
Wales. Our fresh version is rindless, and is sold at
about 2 weeks old. We love the humble roots of Caerffili,
and we think this style of cheese particularly highlights
our fresh, creamy milk.
